Ohhhh yyyyyeah. I could literally stop the post right there since that says it all. But this takes Peanut Butter & Banana Nice Cream to a whole new level. So, let me introduce you to your new favorite craving, Chunky Monkey Breakfast Ice Cream. With swirled peanut butter and raw chocolate chunks, you’d think that would be enough to satisfy, but you know me! I couldn’t just leave it there. I wanted this to be a guilt-free meal, so I made sure I didn’t sweeten with sugar, just fruit. Instead, the flavor is developed through an almost french vanilla flavor with a hint of almond and cinnamon to enhance the natural sugars. Also…it’s like you put peanut butter cups in there without making peanut butter cups. Less work? No objections here. You don’t need anything else in this amaze-me banana ice cream. Dairy Ice Cream?! You’ve met your match.
Originally when I was working on this post I was thinking, yeah, okay, who doesn’t know that you can puree frozen banana and get soft serve ice cream? If you are part of the whole-foods circuit, you know the magic in bananas. Pureed bananas are probably your staple, your jam. In fact, in the comment section of my freezer post, you told me so. Bananas are a staple for me too! One ingredient ice cream is pretty amazing on it’s own and oh so easy to make decadent and packed full of flavor. But I can’t say enough about how different this tastes. I’m totally for customizing recipes and making them your own, but for me, try it as is. This recipe is a favorite in our household for good reason.
The Nutrition: Chunky Monkey Breakfast Ice Cream
It’s all about the bananas! Bananas are not only a super easy thing to put in your freezer, but they are a great way to welcome spring. They are packed with potassium, magnesium, Vitamin B6, Vitamin C, as well as a small dosage of Vitamin A and Iron. With the weather starting to change, these will help keep your electrolyte balance when your city is starting to warm up. I use bananas as a workout recovery snack because they also contain a bit of calcium and phosphorus. So the next time you go to reach for that sports drink, I dare you to reconsider. Why go for a sports drink when you can have ice cream?
Bananas are great for migraines
I’ve talked about how to prevent and naturally get rid of migraines in this post, and it’s that time of year for me to put it to use! With the weather changing, I need all the help I can get to prevent headaches. Do you suffer from migraines? If so, bananas, avocados, and ginger need to make your acquaintance. These superfoods are always in my house and help keep my equilibrium in check.
Ingredients
- 3 dates
- 2 frozen, sliced bananas
- 1/4-1/3 cup milk (I used coconut milk)
- 1 tsp vanilla powder
- 1 tsp vanilla bean paste
- 1/2 tsp cinnamon
- 1/2 tsp amond extract
- pinch of salt
- pinch of nutmeg
- 1 tbsp unsweetened peanut butter (take very small chunks at a time
- Raw Chocolate Chunks or cacao nibs
- walnut pieces (optional)
- Banana Macadamia Nut Granola
- fresh bananas
Instructions
- Blend all of the ingredients from the "blend" section in a food processor or high-speed blender. Blend about 30 seconds-1 minute, or on the "Frozen Desserts" mode on your blender.
- Use the plunger to evenly smooth out the ingredients or stop every 10 seconds to scrape the sides.
- Once blended (dates should be pureed completely), place in a bowl.
- Take the tbsp of unsweetened peanut butter and evenly distribute throughout the ice cream by placing the peanut butter in 1/4 tbsp chunks. Then, swirl!
- Swirl in the rest of the ingredients
- Place in a bowl and top with toppings for an extra special treat or breakfast!
If you want to make the raw chocolate chunks for this delicious chunky monkey breakfast ice cream, just use the same ingredients that I used in my chocolate cups recipe, put in a container lined with foil or parchment paper, freeze, then break into pieces. I always keep this on hand in the freezer.
Wednesday I went to the gym and lifted weights. Then, I had a protein smoothie, and a quart of water. I thought that would be sufficient, but I made the mistake of not checking the weather and seeing that the San Fernando Valley was going to see 90 degree weather on Thursday! That is a 10 degree difference from the day before and my body was feeling it. So there I was, lying awake for hours, feeling dehydrated and feeling like a teen from the growing pains in my arms. I finally got to sleep at around 4am. Talk about ouch! I woke up with a killer headache. The kind that feels like I went on a weekend bender. So, I made this chunky monkey breakfast ice cream, drank a cup of black tea with masala spices and honey and took a deep breath. Outcome? I’m excited for the day to begin and my headache is gone. BRING IT ON! Once you get used to how to handle your own type of headaches, you’ll rarely need to reach for any type of drug. And strangely enough, natural methods actually work faster. Not only is chunky monkey breakfast ice cream good for breakfast and migraines, it is also great for post-workout recoveries and hydration.

I very much appreciate you sharing this post. I get migraines as well, and they used to be debilitating. One of my main symptoms, other than an awful headache, was dizziness that would make me unable to walk in a straight line and afraid to drive. I was on medication for about six months, then slowly weaned myself off of it and tried my best to stay away from my triggers. Caffeine is a HUGE trigger for me, so I avoid it completely. Processed foods are another big one. Things with nitrates, like hot dogs, also put me on shaky ground. But I stay away from all meat now, so that’s not a problem 🙂
I’ll still get one now and then, like I did this weekend. I’m not sure what exactly triggered it, but I sat down to read this post with my own bowl of banana mango nice cream! It soothes my stomach and somehow also helps my headache. Lots of water, rest, and whole plant foods are the best prescription for me to help a headache.
